Home Again (and a recipe)

So I have returned from my Lexington Comic Con adventure.  Unfortunately, I have returned sick.  I suppose being packed into a convention center with approximately 6,000 other people it was inevitable.

 This is me and Theodus Crane.  He played Big Tiny on The Walking Dead.  He was awesome and very sweet.  It was worth coming home sick to get to have such a good time with my kid.

 I felt a little off yesterday but today I woke up feeling as though I'd been gargling with broken glass and rusty nails.  So what is the logical thing to do when you have a sore throat?  Make soup!  Even if it is 7 in the morning...

So, at that hour I have no patience or coordination  on the best of days so this is a quick and dirty Hot and Sour Udon Noodle soup.  Afterward, I will tell you what I would do if I were feeling well, and it was a more reasonable hour of the day.

2 cups water
2 tsp chicken bouillon powder
1 tsp minced garlic (from a jar)
a pinch of dried parsley
a pinch of black pepper
1/4 tsp powdered ginger
splash of soy sauce
squirt of Sriracha
2 drops of sesame oil
a healthy squirt or two of lime juice (from a plastic lime shaped bottle)
a small handful of udon noodles broken into small pieces

In a small sauce pan bring the water, boullion, garlic, parsley, pepper, ginger and soy to a boil.  Add the udon noodles.  I broke mine up just because I couldn't be bothered with long noodles that early in the morning.  My package of noodles said to boil for 4 min.  Make sure you look at the package of your noodles for cooking times.  Turn of the burner but leave the pan on the stove.  Add the Sriracha, sesame oil and a really healthy squirt or two of lime juice.  Taste for seasoning and adjust as you like...some bouillons are saltier than others as are soy sauces.  Add a bit of water if it's too salty.  Consume while it's steaming hot.  It burns so good :)

I used these ingredients because garlic and ginger always seem to improve my colds and sore throats and I have to believe that the heat of the Sriracha helps increase blood flow to the throat.

If I were making this for people other than my sick self or wanted to make a nice dinner presentation, I would use a quality chicken broth (preferably homemade).  Also, freshly minced garlic and ginger and probably add a bit of carrot and/or daikon radish.  I would use fresh parsley (maybe a bit of cilantro if you are one of the people to whom it doesn't taste like dish soap).  And fresh lime juice and slices or wedges of lime in the bowls when serving.  Oh, and I probably wouldn't break the noodles.  They are much prettier long.

Note:  If you wanted to increase the protein you could make this an egg drop soup with or without the noodles.  Just mix up a raw egg in a coffee cup and drizzle it slowly into the simmering broth and stir gently with a fork to make long ribbons of egg.  It won't take more than a minute or so for the egg to be cooked.

The Ides of March

I'm currently in a hotel room.  All by myself.  It's so strange.  I can't recall having ever stayed in a hotel alone before.  Having been married for all of my adult life and with 3 children, the opportunity just never presented itself.  Today I drove my son back to school after he'd been home for Spring Break this week.  I'm staying the weekend to spend some time with him and take him to Lexington Comic Con tomorrow.  It should be interesting.  So, he's gone back to his dorm and there is some truly atrocious tv tonight...I decided to do another Simple Woman's Daybook entry.



Outside my window...
The Berea College Campus.  I'm staying in a lovely historical hotel right on campus.

I am thinking...About how nervous I am to try to find my way around Lexington tomorrow.

I am thankful...That we arrived here safely and in good time.

In the kitchen...It's a hotel, I have no kitchen :)  I did, however, have some delicious pollo con chorizo at a local Mexican place tonight.

I am wearing...Blue flannel pajama pants and a gray Grateful Dead t-shirt.

I am creating...Memories with my son this weekend.

I am going...To Comic Con tomorrow.  I'm going to meet Lando Calrissian himself... Billy Dee Williams!

I am wondering...How my other kids are doing without me.

I am reading...Spoilers for The Walking Dead online.  Shhhh...don't tell.

I am hoping...That I am able to sleep tonight.  I have sleep issues anyway and being alone in a hotel for the first time may not help matters any.

I am looking forward to...Spending the whole day with my son.  There aren't too many teenagers that willingly spend time with their mom's... never mind actually invite them to things.  I'm very lucky.

I am learning...Some truly disturbing things are coming up on The Walking Dead.  Wow.

Around the house...I hope things are going smoothly.

I am pondering...That I guess it's cool that I'm still trying new things at the ripe old age of 37.  Even if it does make me nervous as all get out.

One of my favorite things...In this hotel room, one of my favorite things is the Keurig coffee maker.  Mmmmm...coffee.

A few plans for the rest of the week...Having fun with my kid and getting home in one piece.  Also taking my youngest to her 4H meeting.

I've been seeing The Simple Woman's Daybook on some of the blogs that I visit regularly.  So today I decided to give it a try.


Outside my window...  My sad looking yard.  It's still cold and gray.  I do see about 3 blooms on my forsythia...maybe Spring really is coming.

I am thinking... That I should do more with this blog.  My motivation is lacking.

I am thankful... That the chaos of the world stops at my doorstep.  It's crazy out there.

In the kitchen...  There is a pack of apple chicken sausages waiting for me to cook them.

I am wearing... Gray yoga pants and a pink t-shirt with bare feet.  Even when it's cold I can't abide socks and shoes indoors.

I am creating... This blog and little else.  My creativity is pretty much nil this time of year.

I am going...   Not leaving the house if I can avoid it today.  Tomorrow will be errands and grocery shopping.

I am wondering... What to get my son for his birthday.  He's going to be 20 soon! Where does the time go?

I am reading...  Cold Days (from the Dresden Files) by Jim Butcher and Nigllisima (cookbook) by Nigella Lawson.

I am hoping... For a certain '69 Camaro that may be coming our way.

I am looking forward to... My son coming home from college for Spring Break this weekend.

I am learning... To take better care of myself.  I allowed myself to get too rundown and now I'm learning to rest and nourish my body.

Around the house... The basic stuff, plus starting some seeds for the garden.  The lettuce seeds are coming along much quicker than expected.

I am pondering... Lexington Comic Con.  My son has asked me to return to school with him at the end of Spring Break and spend a weekend with him and his friends at Comic Con.
